1. Selection
The fresh ginseng with pulpy feet, body, no scars, no disability and good shape is selected as the raw material for processing Freeze-dried ginseng.
2. Storage and preservation
In order to prolong the fresh-keeping period of fresh ginseng before processing to ensure the quality of raw materials and products, when selecting ginseng, put the selected fresh ginseng into a plastic bag as needed and store it in the warehouse by air-limited preservation method, which can keep fresh 1 month.
3. Washing
Rinse the soil on the ginseng root with clean water, brush off the debris in the wrinkles and between the forks, so that the ginseng root is clean.
4. Draining and shaping
Place the washed ginseng on the ginseng curtain for draining, shape the ginseng root after draining, and store it in the cold storage for later use. The temperature in the cold storage should be controlled at 1-5℃.
5. Freeze-dried
Freeze-drying is an important step in the processing of freeze-dried ginseng, which determines the quality of the finished ginseng. The freeze-drying equipment is mainly composed of freeze-drying ovens, condenser, Freezer, Vacuum pump,↵ heater and other components. The operation process includes freezing process, sublimation drying process and re-drying process.
First, take the shaped fresh ginseng out of the cold storage and put it into a plate, put it on the partition in the low-temperature vacuum drying machine product cabinet, and then turn on the machine for low-temperature freezing for about 2-3 hours, when the temperature reaches 15-20℃ below zero, ginseng roots were frozen and shaped.
After freezing, start the vacuum system to extract air to a higher degree of vacuum, and then start to sublime and discharge the frozen water in the ginseng roots. Since ice crystals need to absorb heat during sublimation, heating should be given. It is required to heat up at a rate of 1-2℃per hour, until the temperature of the separator of the freezer is consistent with the temperature of the ginseng root, stop the temperature rise and keep it for 2-4 hours so that all the frozen water in the ginseng root will evaporate. Finally, it is heated up quickly to evaporate the unfrozen water. With the continuous discharge of water, the temperature gradually increases, but generally can not exceed 40-50℃. It takes 30-40 hours to complete the whole process of freeze-drying, and the ginseng root can meet the drying requirements (water content is reduced to below 13%).
At this time, the vacuum environment is released, and the finished product is taken out.
6. Sterilization
In order to keep ginseng from mildew during storage, it should be sterilized. It is better to use microwave sterilization method, which has no adverse effect on its active ingredients, color and smell. The method is to put the active ginseng into an open plastic bag without sealing, and then put the plastic bag into a microwave sterilizer, and heat and sterilize it for a short time with a power of 7-10kw, which can make the mold seedlings inactive.
7. Packaging
Using vacuum body packaging method. After the sterilized active ginseng is slightly rehydrated, and further shaped, it is individually fixed on yellow cardboard. Then put the yellow board paper together with the ginseng into the composite film bag, draw out the air, heat seal and seal, and then put it into a delicate box and put it in the warehouse for sale.
